Gastrofestival prix-fixe cold starter at the restaurant Papúa Colón: an “opera” of cherry tomatoes macerated in lemon and jalapeño peppers, cochinita pibil (slow-roasted pork), red onion and orange air emulsion, created for the Spanish cuisine section of the Gastronomic Madrid activities.
