La Pajarita, Madrid’s oldest confectionery, opened in 1852 in Puerta Sol and owes its name (“The Paper Bird”) to the fondness of its clientele, who frequented the tertulias, or social gatherings, held in Madrid’s cafés at the time, for making paper birds out of their napkins. Customers included Miguel de Unamuno, among others. Its goods –sweets that come in sixteen flavours and chocolate bonbons– are all artisanal.
