Botín, which was established in 1725 and according to the Guinness Book of World Records is the oldest restaurant in the world, is a fixture of Madrid’s traditional cuisine. Its suckling pig and lamb roasted in the old Castilian style in a wood oven that dates back to the founding of the restaurant are its specialities.
