Violets have been the flavour that best represents our city since the early 20th century, when some tiny sweets became all the rage. Although they are also typical of some French cities like Toulouse, the violet sweets here originated almost as a tribute to the flowers themselves, which were sold by women in streets like Calle Alcalá and Gran Vía avenue. As the cuplé made famous by Sara Montiel goes, the presence of these violeteras, or violet sellers, announced the arrival of spring. The recipe is simple: sugar and violet extract.
